Pineapple Cake for 2

I thought this turned out well. 

Pineapple Cake for 2
2 slices pineapple slices
2 maraschino cherries,whole
1/3 cup reduced fat Bisquick®
2 tablespoons Splenda w/Fiber
1/4 teaspoon rum extract
1/2 teaspoon butter extract
3 tablespoons skim milk
1 teaspoon vanilla
2 tablespoons brown sugar, divided
1 egg white

Preheat oven to 350^. Spray two small oven-proof bowls with cooking spray. Place one pineapple slice and one marachini cherry in the bottom of each bowl; sprinkle with 1 tablespoon of brown sugar. Combine Bisquick, Splenda, run extract, butter extract (don't have rum or butter flavor? Try almond or even orange or lemon), milk, vanilla, brown sugar and egg white. Pour over pineapple. Bake 12 to 15 minutes or until lightly browned. Invert on plate and serve.

So good!

The new peanut butter multigrain Cheerios are the bomb!!  Portion these babies out immediately upon bringing them home. 3/4 cup is one serving. This stuff reminds me of the Cap'n Crunch cereal I ate as a kid.  yummy good!

I also tried the new Dulce de Leche Cheerios. Also good. They remind me of that new 80 calorie cereal only without the icky after taste. :)

Couscous and Okra

yummy!


Couscous &Okra
8 ounces ground beef, 95% lean
14 1/2 ounces stewed tomatoes
8 ounces frozen okra
1 teaspoon onion powder, chopped
1/2 teaspoon thyme
1/3 cup couscous, whole wheat, cooked
Salt & pepper, to taste

Brown ground beef in large skillet; drain. Add stewed tomatoes, okra, onion powder, thyme, couscous and salt and pepper. Cover and simmer until heated through and couscous is cooked.

Yield: 3 servings. Per serving= 294 Calories; 2g Fat (12.2% calories from fat); 11g Protein; 23g Carbohydrate; 5g Dietary Fiber; 21mg Cholesterol; 60mg Sodium.

Hot Dog Eggs

I wasn't sure about this, but it turned out pretty good.

Hot Dog Eggs
1 egg
1 egg white
1 light hot dog (40 cals), sliced
1/2 TB ketchup
1/2 TB mustard
1/2 TB dill pickle relish

Combine all ingredients well. Pour into small skillet sprayed with cooking spray; scramble.
Yield: 1 serving= 137 Calories; 5g Fat (36.0% calories from fat); 14g Protein; 7g Carbohydrate; trace Dietary Fiber; 202mg Cholesterol; 825mg Sodium. Exchanges: 1 1/2 Lean Meat; 0 Vegetable; 1/2 Fat; 0 Other Carbohydrates.

Banana Bread for 3

still too many WW points. :( but tasty!

Chocolate Chip Banana Bread
1 banana
1/3 cup reduced fat Bisquick®
1/3 cup old-fashioned rolled oats
1 egg
1 teaspoon maple flavoring
1 tablespoon brown sugar
2 tablespoons Splenda w/Fiber
1 tablespoon mini chocolate chips, Nestle
Preheat oven to 350^. Combine all ingredients. Spray mini loaf pan with cooking spray and pour in batter. Bake 25 to 30 minutes or until lightly browned.

Yield: 3 servings. Per serving=166 Calories; 4g Fat (18.9% calories from fat); 5g Protein; 31g Carbohydrate; 4g Dietary Fiber; 62mg Cholesterol; 189mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 1/2 Fruit; 1/2 Fat; 0 Other Carbohydrates.

Soyrizo Veggie Soup

Soyrizo Veggie Soup

5 oz Soyrizo, casing removed
1/2 c. shredded carrots
1/2 c. sliced celery
14 oz fat free vegetable broth
14.5 oz can Tomatoes with green chilies, undrained
1/2 c. shredded cabbage

Brown soyrizo a little and add
carrots, celery and peppers in a small amount of broth until soft. Add tomatoes and cabbage and simmer 20 minutes.
Yield: 3 servings. Per serving (1 1/2 cups)= 139 Calories; 8g Fat (42.0% calories from fat); 13g Protein; 12g Carbohydrate; 4g Dietary Fiber; 0mg Cholesterol; 1001mg Sodium. Exchanges: 1/2 Lean Meat; 1 Vegetable.

Spice Cake Oatmeal Cookies

Oatmeal Cookies
1 pkg Spice cake mix
2 c. rolled oats, uncooked
1 egg
1 egg white
1/2 c. unsweetened applesauce
1 t vanilla
1/4 c. brown sugar
1/2 c. Craisins

Preheat oven to 350^. In large bowl combine all ingredients. Mix well. Drop by tablespoon onto baking sheet sprayed with cooking spray. Bake 12- 15 minutes. Cool on wire rack.

Orange Marmalade Sauce for 2

Tasty!


Orange Marmalade Sauce

Makes about  ½ cup

1 TB orange juice concentrate
1/2 cup sugar free orange marmalade
1 TB brown sugar
2 tsp cornstarch mixed with ¼ c.water
1 tsp vanilla extract

In a medium saucepan, bring orange juice to a boil. Reduce heat to medium and cook, uncovered, until reduced by half, 20-30 minutes. Add orange marmalade and brown sugar; return to a simmer, whisking until smooth. Add cornstarch mixture to sauce and cook, until slightly thickened, about 1 minute. Remove from heat and stir in butter and vanilla extract. Let cool slightly; serve warm. (The sauce will keep, covered, in the refrigerator for up to 4 days.)

Spinach Cheese Balls

Ok, maybe not as tasty as sausage cheese balls, but tasty nonetheless!

Spinach Cheese Balls

1 box (9 oz) frozen spinach, thawed, squeezed to drain
1 cup reduced fat Bisquick® mix
1 cup shredded reduced fat mozzarella cheese
1 egg
2 teaspoons Italian seasoning
8 oz tomato sauce with basil and oregano, if desired

Heat oven to 400°F. Spray cookie sheet with cooking spray. In large bowl, mix all ingredients, except tomato sauce. Shape mixture into 16 1-inch balls; place on cookie sheet. Bake 10 to 15 minutes or until golden brown. Immediately remove from pan. Serve with pasta sauce.

Yield: 8 servings. Per serving (2 spinach balls, not including tomato sauce)= 108 Calories; 4g Fat (30.1% calories from fat); 7g Protein; 12g Carbohydrate; 1g Dietary Fiber; 31mg Cholesterol; 320mg Sodium.  Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 1/2 Vegetable; 0 Fat.

Slow Cooker Zucchini Bread

I was surprised at how easy and tasty this was.


Slow Cooker Zucchini Bread
dash salt
1 c. reduced fat Bisquick
1 1/2 teaspoons cinnamon
½ c. Splenda

¼ c. packed brown sugar
1 egg white
1 1/2 teaspoons vanilla
1 cups zucchini, shredded

1/2 cup sugar free applesauce

Combine salt, Bisquick, cinnamon, Splenda and brown sugar. Add egg white, vanilla, zucchini and applesauce.

Spray 2 quart slow cooker with cooking spray. Add batter and cook on high 2-3 hours.

Cornbread for 2

This goes great with those blackeyed peas we're supposed to eat today!


Cornbread for 2
1/3 c. skim milk
¼ tsp lemon juice
1/3 c. corn meal
1TB Splenda w/fiber
1 egg white
Dash salt
1/8 tsp baking soda
1/8 tsp cream of tartar
1 TB light margarine
Preheat oven to 450^. Spray mini loaf pan with cooking spray; set aside. Combine milk, lemon juice, corn meal, Splenda, egg white, salt, baking soda and cream of tartar. Pour into prepared loaf pan and bake until lightly browned.

Yield: 2 servings. Per serving= 132 Calories; 3g Fat (21.4% calories from fat); 5g Protein; 22g Carbohydrate; 3g Dietary Fiber; 1mg Cholesterol; 330mg Sodium.  Exchanges: 1 Grain(Starch); 0 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 1/2 Fat.
